Freestyle Nelson on Pilsner malt

Somewhere, probably, there exists a laminated flowchart connecting petroleum futures, old shipping lanes, refrigeration patents, hop resin volatility, and the peculiar fact that a human being can stand under fluorescent lighting at 2:14 in the afternoon and suddenly become emotional over aromas resembling diesel fuel and underripe white grapes. This beer does not claim to explain the chart. Only to have emerged from it.

Brewed in the Western tradition and left deliberately unfined and unfiltered — because clarity, historically speaking, has so often been the first lie — this IPA arrives with a grown-up bittering staff, hop oils decifered by the visual cortex, ghosts of the Pacific, microscopic weather systems. Freestyle Nelson drifts through the glass like a green fog over a coastal town: crushed raspberry, black lime, sauvignon blanc, rain on hot asphalt, a gas station fruit stand operating as cover for something.

Beneath it all, a chassis of pilsner malt keeps the machinery from flying apart completely. The bitterness appears almost architectural. The finish is dry enough to erase fingerprints. Somewhere, in the distance, invisible surf rock plays through blown speakers.

Introducing Voyage Spectral, the latest beer in our single-origin series, featuring Manilita, an experimental hop variety out of the @freestylehops research collective.

As a test kitchen brewing company, a big part of our mission is to help introduce new ingredients, flavors and possibilities to the world of beer. It always feels exciting to get our hands on vanguard hops like Manilita because it takes so long for growers to bring new varieties into the fold.

Single-Origin Manilita on barley, wheat and oats

Developed within the @freestylehops breeding program in Nelson Lakes, Manilita emerged from a pursuit less concerned with brute-force intensity and more focused on nuance, saturation, and aromatic texture. Still experimental and grown in extremely limited quantities [we had to charm Freestyle for enough to make this beer] the variety has quickly attracted brewers for its unusual ability to present vivid tropical character alongside a distinctly candied citrus profile. Unlike many modern cultivars, Manilita moves with softer edges: pink citrus, ripe mango, nectarine, red berry, and flashes of gummy candy layered into a remarkably plush aromatic spectrum.

This IPA was designed as a single-origin study of the hop in its purest form — no supporting cast, no blending, no distraction. A pale haze carries aromatics of Juicy Fruit gum, jackfruit, paw paw and mango nectar, while the palate opens into pulpy citrus, soft tropical fruit, and a delicate suggestion of creamsicle and fresh-cut nectarine. Low bitterness and a velvety body allow Manilita’s uncommon aromatic detail to unfold gradually, revealing something different with each return to the glass.

Created in homage to the formative haze movement that emerged from the breweries of Vermont and Massachusetts in the early 2010s, this triple was designed to evoke memories of the original hazy ipas that got us into beer in the first place.

In the glass, the iconic Orange Julius character is unmistakable and it’s highlighted by complimentary notes of fresh squeezed orange juice, apricots and tangerine creamsicles.

This is a beer that looks more like a glass of orange juice than the lighter, pale hue that we have all become accustomed to. If you can’t drink a beer with a bit of an orange tint, this one is not for you. If you, like us, have fond memories of quests to the most notable breweries in New England, in search of some of the best beer on Earth, at a time when a new style of hazy IPA was taking shape, well, we think you will love this one.

Conceived as both study and celebration, Echo in the Memory was brewed as a heartfelt tribute to our friends at Twin Elephant as they mark their 10th anniversary this weekend — honoring our friendship and serving as a companion piece to Bone Memory, a collaborative effort between @twinelephantbrewing @troonbrewing and @thetestbrewery that is also releasing via Twin Elephant this weekend.

Credit for the title is owed to our dear friend @memory_level who has continuously pointed us towards some outstanding reading material over the years.
