So much happens in the span of a few seconds 😅.

Besides remembering a bajillion things like cup rotation, spout position, placements, flow rate, etc... there's also the design itself. Since home baristas don't get a lot of reps, it takes a long time for these movements to become second nature so we can focus on the designs.

Sometimes when the pour starts, my mind just goes blank and I wing it 😆. Or I have to pivot midway because things aren't turning out well.

But despite all that, sometimes the end result hides a lot of the chaos 😬.

This was one of those times.

And whatever happens, it always tastes great.

Matcha Review: Eisho no Mukashi 🍵

This is the second blend I'm trying from my Fukujuen stash 😊. It's also the nicest one I got. Eisho no Mukashi is definitely wasted in a latte (tried it) as most of the notes are lost. Usucha is the best way to enjoy it in my opinion.

As usucha, there was a nice fragrant and fresh aroma. This is a more vibrant, vegetal tasting blend that is bright and spring-like. No "steamed spinach" taste like Ikuyo by Ippodo, but stronger than Yugen by MK. There's a bit of umami, but it's not an "umami bomb" type blend like Shoin by Ippodo or Mizuki by Sugimoto. Astringency was mild to moderate at a 2g:65ml ratio, which wasn't too much but was close to getting there for me. I thought 2g:70ml was more enjoyable, though the overall taste was milder as expected. There wasn't too much bitterness, and there weren't any dull, earthy flavors.

Overall, Eisho no Mukashi was enjoyable as usucha and was a vibrant, vegetal type with mild to moderate astringency. It reminds me of a stronger Yugen (MK).

I also tried out a new kurotake (black bamboo) whisk. Due to the shapes of my chawan, I actually had to trim the central tines a bit. I can definitely tell the quality over my existing cheap whisks, but since this is the shin chasen style where the tines aren't curled up a bunch at the end, it's harder to whisk up a paste for koicha/lattes. So I prefer using this whisk for usucha as there's more volume and it's easier on the tines.

Slowly working thru my freezer stash! More reviews to come. 😊🍵

Por fin pude probar este dripper gracias a los amigos de @elmaedelosfiltros junto con un pack de filtros @cafec_japan Abaca

Y en su honor, lo hice con granos de Costa Rica. Un gesha semi-lavado importado por @finders_cl

El SD1R es desde ya mi dripper favorito para microdosis. En este caso use 10 grs de café y lo preparé directo en la taza.

Cortado Swan Challenge: Day 8
Progress! 🥹☕🦢🙌

Started with a spill but ended with two decent ones finally! Now I need to work on the base (pushing forward) and bringing my spout closer to the surface for the neck so it's not as thin.

Whenever you need some motivation, like during a latte art slump, go back and watch some earlier attempts. Progress takes time and is more evident when you compare further back. 🙌

Also thankful for friends to make lattes for, which means more practice like today 😆.

Cortado Swan Challenge: Day 7 🍵🦢
💡Matcha Ratios - Contrast and Taste

I made too much coffee yesterday so I saved some for this morning. That's why today is focused on matcha 😊🍵.

My milk was steamed too thick today, so neither pour was great. But it's interesting that you can see the difference in contrast between the two pours. This is mainly caused by the slight difference in the matcha powder to water ratios for the concentrate (1:10 vs. ~1:12). I had to add a bit of water for the 2nd one as it was a "leftover" amount, since it's hard to whisk a very small amount of matcha and water. The extra thick milk also may have made a small difference for the 2nd pour. I've noticed this before in lattes, but it's more pronounced in cortados.

Taste wise, I do prefer bolder matcha flavors. So matcha cortados tastes better to me than lattes. And higher ratios are even better. Partly because some of the powder stays on top and mixes with the milk foam layer of the design. So you get this extra bold top layer which is quite enjoyable when sipping 😊.

But while the contrast of a higher ratio is higher (deeper greens), it's hard to mix it evenly in a cortado since you don't have much room to lay your base. That's why the 2nd pour is easier to mix and more like an espresso shot with less crema. The taste is also more even for that pour since it doesn't have that top layer of extra concentrated powder. But since there was a bit less matcha overall, it wasn't as bold tasting, so I definitely prefer the first one.

It's interesting how such a small difference in ratios makes such a big difference! Have any of you noticed this too before?

Cortado Swan Challenge: Day 6 ☕🍵🦢

I had some extra time today, so I got in a bunch of practice! I did make it harder for myself by switching between matcha and espresso, and even between beans too since I ran out halfway 😆.

Also reused leftover milk after pouring and just topped it off, which can work but may not be as consistent for steaming. It's hard to steam for a cortado unless you have a super tiny pitcher, which I don't 😅. So I often have some leftover milk. But I also wanted to not waste milk as I'm using @lactaid (I prefer it's taste the most! 😊).

Even though there were mistakes in every pour, I'm learning more about the details now for cortado swans. Like making sure there's enough distance between the wing and neck so it won't drag, which is not as big of an issue for lattes since there's more space. Or how to adjust the base based off milk thickness and crema (some of my beans were old and had little crema), when you don't have much room to lay it.

The results may come later, but right now there's lots of learning and experimentation. This is a microcosm of latte art in general. You just have to trust the process and keep trying, keep learning from every pour, no matter how it turns out. Also, getting tips and support from the community is pretty awesome and so helpful! Cortado Swan Challenge: Day 3 ☕🦢

Well... slightly better on the wings, even though my rippling is still quite uneven, but I ran out of space at the head and had to abort 😆🫣. Poor little guy doesn't have a beak.

This is so tricky... Usually for swans and rosettas, you can lay your base higher than you would for multi-layer designs like winged tulips. But in a cortado cup, I think I will try laying it much lower and swirling to mix.

Either way, it always tastes great 🙂. TGIF!! ☕🙌

Cortado Swan Challenge: Day 2 🍵🦢

Matcha Latte Art Learnings:
Today, I tried two different methods of laying the base for matcha latte art. This is important when using a thicker matcha concentrate, especially when you won't be laying the base as high.

In the first pour, I used the more common "Swirl" method. But matcha concentrate isn't like an espresso shot. It's a lot thicker. It's also a suspension (not a solution), so the powder doesn't dissolve in water and will quickly settle. So the Swirl method won't always mix your base well enough for matcha, unless you have room to do it quickly and forcefully.

The second method I used is the "Central Stream" method (made-up name, just go with it 😆). This is where you pour directly in the center with a bit more force, moving the pitcher higher as you go (similar to some pourover methods). The force from the milk hitting the bottom of the cup and bouncing up along the sides can be enough to mix the base quickly and sufficiently. You can see the difference in the Reel.

As for the swan... I only like the head. I need to work on everything else. All my plans go out of my head once the pour starts 😅.
