𝗧𝗶𝗺𝗲𝗺𝗼𝗿𝗲 𝗗𝗶𝘀𝗰𝗼𝘃𝗲𝗿𝘆 – 𝗜𝗻𝘀𝗶𝗱𝗲 𝘁𝗵𝗲 𝗥𝗼𝗮𝘀𝘁
𝗩𝗼𝗹.𝟯𝟭 𝗠𝗼𝗱𝗰𝘂𝗽 𝗖𝗼𝗳𝗳𝗲𝗲

Based out of Jersey City, @modcupcoffee brings a serious personality to the specialty coffee scene. What started as a mobile cart in 2013 has grown over a decade into an East Coast powerhouse roastery.

Driven by style, music, curiosity, and an obsession with freshness, Modcup approaches coffee as both precision craft and sensory exploration. Roasting on Stronghold technology, they focus on clarity, structure, and expressive transparency — pushing modern processing forward while treating coffee with the same terroir-driven respect as fine wine.

This volume highlights a standout lot from Finca Soledad in Imbabura, Ecuador. Grown by Pepe Jijón, this Typica Mejorado is a unique natural cross between a Bourbon variety and an Ethiopian landrace. Pepe used his signature TyOx washed process, using controlled oxygen exposure during fermentation to give the cup intense clarity, structure, and aromatic lift.

To bring out its delicate tea-like elegance, we used a flat-bottom B75 dripper and M01 grinder for a fast, clean pour.

𝗕𝗿𝗲𝘄 𝗗𝗲𝘁𝗮𝗶𝗹𝘀:
Dose: 14g
Grinder: M01 set at 8.5
Dripper: B75
Water temp: 92°C
Brew ratio: 1:15
Total brew time: 1:45

𝗛𝗼𝘄 𝘄𝗲 𝗕𝗿𝗲𝘄𝗲𝗱:
00:00 | Pour 45g, bloom for 30s
00:30 | Pour to 120g, small gentle circular motion
00:55 | Pour to 160g, continuing circular motion
01:15 | Pour to 210g to finish

𝗧𝗮𝘀𝘁𝗶𝗻𝗴 𝗡𝗼𝘁𝗲𝘀:
Aroma: Bright grapefruit peel, chamomile, and soft florals.
In the cup: Vibrant citrus precision. Crisp blood orange and grapefruit cut through a sweet backdrop of panela and ripe apricot, balanced by a silky, light sun-tea texture.
Finish: Exceptionally clean and refreshing with lingering citrus notes.

An incredibly vibrant, juicy cup that perfectly captures the modern magic of oxygen managed fermentation. 🍊✨

Our first origin trip to Ethiopia — a moment we’ve waited years for as a company.

Sidamo has lived in our cups, our cupping rooms, and our conversations for a long time through coffees from Bombe Mountain, Keramo, and Shantawene. But nothing compares to finally standing here, breathing this air, and seeing this place with our own eyes.

We came with one clear intention: to visit @tamiru_tadesse.t — the producer many consider the golden child of Ethiopian specialty coffee.

From the moment we arrived at @alocoffee.et, we were met with extraordinary hospitality. Tarimu and his entire team welcomed us with generosity, openness, and pride — taking the time to walk us through their work, their systems, and the discipline behind every decision.

Standing there, it became immediately clear why Tarimu’s coffees won the inaugural Ethiopian Cup of Excellence, and why his lots sit where they do on the global stage. The focus, the structure, the standards — nothing is left to chance. Excellence here is not accidental. It’s built, protected, and lived every day by an exceptional team.

We left with a deeper understanding, immense respect, and real gratitude for the warmth and care shown to us.

Thank you, Tarimu, and thank you to the entire Alo team, for welcoming us so generously and for the work you do.

A huge thanks to @firaol_ahmed for making this happen, massive big up to @robertasami for sharing the journey with us and @wolfecut for capturing these precious moments. One finals thanks to ‘Jason Stathem’ for driving through roads that made Jersey City ones Look like an F1 track 😂❤️

Ethiopia — at last. ☕️🇪🇹✨

This isn’t anti-washed coffee, anti-terroir, or anti-producer.

It’s about how disruptive movements repeatedly reshape culture.

And how the things first dismissed as vulgar, fake or dangerous often end up expanding the medium itself.

This isn’t an argument against washed coffees, terroir, or precision.

It’s an argument against pretending there is only one valid path for coffee.

Punk didn’t kill jazz. Hip hop didn’t kill rock. Advance processing won’t kill washed Ethiopian coffees,
SL washed Kenyans,
or the epic progressive work of high-elevation Central and South American producers

The landscape just got wider.
And maybe that’s a good thing.

We’ll be brewing some mind blowing coffees for the epic coffee community at the Roaster Village #RV28 again this year!

On top of that, we’ll be guest brewing with friends at @oxo @xbloom_coffee @sanremocoffeemachines

Can’t be a proper coffee event without an appearance from BQ @brian.quan_

@fincasoledadintag and @coffee_with_jose will be bringing the energy again Saturday AM!

Drop a comment below if you’ll be joining us in SD! Super excited to vibe, over-caffeinate and take in the energy with you all ❤️

Slowed my afternoon down with this @fincasoledadintag
@modcupcoffee Pepe Gesha — washed, Ecuador. Graycano, abaca filter. 17g at 15:1. Bloom of 34g for 30 seconds, 170g circular pour, circular pour ti 230 and center til 250.
Creamy. Jasmine. Just the right acidity pop. And a sugary cola finish that lingers longer than you expect.
This was a great way to slide into the weekend.

📍 Graycano | Abaca filter
⚖️ 17g | 15:1 | 700 microns
🌊 3 pour| 34g bloom x2 / 30s | 250 total | center pour for final 20g
