🖤 FOOLPROOF CHOCOLATE MOUSSE
…oh and it’s vegan (but no one will be able to tell)

Serves 2–4

Ingredients
• 4 pitted Medjool dates
• 1 tsp instant espresso powder
• 4 oz dark chocolate (I used 2 Hu Simple bars)
• 8 oz silken tofu
• Flaky salt

Instructions
1. Add the dates to a high-speed blender. Pour over ½ cup boiling water + espresso powder and let sit 1–2 minutes to soften.
2. Melt the chocolate using a double boiler (or microwave in 30-second intervals).
3. Add melted chocolate + silken tofu to the blender.
4. Blend until completely smooth, scraping down the sides as needed.
5. Transfer to little jars or glasses and refrigerate at least 30 minutes.

Finish with flaky salt, shaved chocolate, cocoa nibs, or a dollop of coconut whip. #vegan #easyveganrecipes #plantbased #plantbasedfood #dessert
