Building something new in the Industry you love and the city you call home is something that’s indescribably special. Getting to do it with people you love and respect not only makes it more meaningful, but also adds a level of joy to something you already lose sleep over because of how exciting it is.

I’m so over the moon to have my dearest friend Nicole Cote ( @fiftytimesfour ) join me as the Bar Manager at @prophecybar . I’ve seen firsthand the joy she carries for our community - for nourishing and building up people and for providing an extremely high level of hospitality to every guest who has sat at her bar. As I take the role of Beverage Director, I’m so lucky to not only call her my manager, but also my friend.

Let’s be honest, there are so many awful things that we’ve all been bombarded with the last little bit here. My industry friends certainly do not hold the monopoly on misery during these times, but I can certainly attest that it hasn’t been easy for us. Though, for me, I’ve had the privilege to be able to focus on my work-life balance the past couple of weeks. Getting outside, exploring my backyard, and being with some of my loved ones has really been a boon to my physical and mental health. Whatever it is you do, and wherever you find yourself, it’s my genuine wish for you to allow yourself some moments to breathe, to look up, to explore and to cherish yourself ✌🏼💕

It’s an incredible honour to be in the same conversation as so many incredible hospitality folks, I am truly touched.

Thank you to everyone who has come to sit at my bars over theyears and let me make you silly drinks and share my love with you. Who knew that a passion for flavours and storytelling would leave me to lead such a wonderful life. Thank you, too to anyone who took a chance and hired me, who stood alongside me in the well, who polished glasses, cleared tables, lent hands, gave advice, scolded, instructed, guided, or poured the post shift drink - there’s too many to list and I love you all for the pieces of you I carry alongside me.

Last Thursday we teamed up with @nutmegandclove for a night that brought Vancouver and Singapore a little closer, through cocktails, creativity, and a shared love for the craft.⁠

This is the second time I’ve been a part of a team that’s put a bar on the 50 best list, but this one feels all the more special. Yes, working in a new amazing bar and playing host to a party held in our hometown is part of it, but there’s so much more to the story.

After 2023 when I received the first scarf, I went through the hardest point in my life. Losing my parents, and consequently losing the bar that I had fostered for almost 6 years left me in a dark spot - feeling cast adrift, alone, hurt and confused. Though the wounds felt deep, I’m glad that they didn’t bleed for long. It came down to the people around me, and my love of our community that I felt pulled back into reality, where I was able to meet the boys who would bring me into the fold to create something new, unique, and fucking fun. Thank you @teddywilkie @jmcoker1 @mikerose999 for trusting me with our bar and our programming. I’m so glad this is only the beginning.

And thank you too, to my bar counterpart and dearest friend @fiftytimesfour, for accepting a lunch invite from me where I’d offer you this job and blow up the dreamy restaurant life you were living - exchanging it for the roller coaster ride we’re on together. You were the first and only person I wanted in your role, and I’ve watched you grow and learn and flourish through it. I’m so proud of you, and I’m so thankful you’re doing the thing with me. You deserve the flowers.

A highball shaped by the forest. 🌲

At the @prophecybar popup during our Global Final in Toronto, @fatherofcups presented Council of Trees - a cocktail inspired by the forests of British Columbia and the quiet intelligence of the natural world.

Built with @johnniewalker Black Label, fino sherry, cedar, birch, alder, cherrywood, and oak moss, it brings layers of smoke and woodland aromas into one deeply evocative serve.

It’s a drink rooted in place, memory, and the idea that nature is never as silent as it seems.

Here’s how to make it:

✨ INGREDIENTS ✨

- 30ml Johnnie Walker Black Label
- 15ml Fino Sherry
- 45ml Birch Water
- 25ml Smoked Tea*
- 5ml Oak Moss**

- Garnish: Rosemary

✨ METHOD ✨

Add all ingredients to a mixing tin and stir with ice. Strain into an ice-filled highball glass, and garnish with a sprig of fresh rosemary.

*To make the Smoked Tea:

- 2000g Water
- 100g Cedar (broken into pieces)
- 50g BC Forestea (smoked alderwood)
- ~2000g Sugar (superfine)
- ~105g Citric Acid

Heat water to a boil. Add cedar and tea leaves, cover and steep for 20 mins. Remove cedar, strain out tea leaves. Weigh tea, combine equal parts tea and sugar. Stir to combine, heat softly if needed. Add citric acid by volume and stir.

**To make the Oak Moss:

- 5g Dried Oak Moss
- Water
- 10g Cedar (pieces)
- ~500g Sugar

Combine 1000ml water with oak moss, bring to boil and steep for 5 mins. Strain water and repeat. Once treated, add oak moss, cedar and 500g water together. Bring to boil and simmer for 15 mins. Strain out cedar and oak moss, and weigh liquid. Mix with equal amounts of sugar to create a 1:1 syrup.
