Last week I had the enormous honour of attending the 41st edition of the @worldchefs.congress & Expo in beautiful Wales — hosted for the very first time in the UK at the magnificent @ICC Wales and legendary Celtic Manor Resort. 🌍👨🏻🍳🏴
Founded in 1928 and inspired by the vision of the great Auguste Escoffier, this incredible congress brought together chefs, mentors, judges, educators and young culinary talents from nearly 100 countries around the world.
I was proud to be there alongside my dear friends at Nielsen-Massey Vanillas, sharing my professional journey — from my apprenticeship days in Brittany to the adventures this beautiful industry has given me over the years. One of the highlights was introducing attendees to the fascinating world of vanilla tasting, exploring origins from Uganda, Tahiti, Indonesia and Mexico, as well as presenting Nielsen-Massey’s new Certified Halal Vanilla range now available in Sainsbury’s UK and Tavola UAE.

One of my three Maine Coon … taking his usual position supervising the house and clearly ready for what’s supposed to be a glorious bank holiday heatwave here in the UK ☀️🇬🇧
Maine Coons are often called the “gentle giants” of the cat world. Originally from North America, they are known for their impressive size, thick luxurious coats, intelligence and incredibly loyal nature. Despite their wild almost lynx-like appearance, they are calm, affectionate characters with huge personalities… and definitely enjoy being involved in absolutely everything you do.
Safe to say Mr Luke is already planning a weekend of sunshine, lounging and keeping a close eye on the garden from the best spot in the house.

🌡️ Your oven temperature.
So many people blame the recipe when often… it’s the oven playing tricks on you! Most domestic ovens can run hotter or colder than what the dial says — sometimes by 10–20°C 😲
A few little tips that can completely transform your cakes, cookies & pastries :
✨ Always preheat your oven properly
Don’t rush this step. Give it time to fully stabilise before baking.
✨ Invest in a simple oven thermometer
A tiny inexpensive tool that can make a HUGE difference. It tells you the real temperature inside your oven — not what the display claims.
✨ Avoid opening the oven door too often
Every peek can dramatically drop the temperature and affect rise, texture and baking time.
✨ Rotate trays gently halfway through baking
Especially in fan ovens where heat can be uneven.
✨ Know your oven personality
Some ovens run fierce at the back… others stronger on top. Learn its little quirks like a baker learns dough.
✨ Bake with room temperature ingredients
Butter, eggs and dairy mix more evenly and create better texture.
✨ Use quality bakeware
Good tins conduct heat properly and give more even results.
Remember… baking is a beautiful balance of precision and intuition ❤️

There could not have been a sweeter way to celebrate this beautiful day than spending the weekend in Wales @worldchefs.congress surrounded by incredible Master Pâtissiers, talented chefs and passionate young culinary students from around the world.
It filled me with so much hope and reassurance for the future of our industry… but also reminded me that the true magic of baking often starts at home — in family kitchens, with flour on the worktop, butter on your fingers and something delicious baking in the oven. ❤️
