一度はVIRTÙでクラシックカクテルもお試しください。バーテンダーにとってもクラシックはいつも大切にしているもの。その意味をGrahamが話します。

「カクテルの種類は本当に多い。多すぎるくらいです。正直、全部のカクテルを覚えるなんて無理です。でも、クラシックは絶対に廃れません。クラシックカクテルを少なくとも50種類知っていれば、バーテンダーとしてのキャリアをスタートできると思います。基本を学ぶことが大事だからです。なぜそのカクテルが作られたのか、誰が作ったのか、そういう背景を学ぶのはとても重要。その学びから新たなアイデアが生まれます。バーテンディングの本も買うといいです。僕も何冊持っているか分からない。家に帰って、たまにそれらの本を引っ張り出して読むと、アイデアが湧いてきます。カクテル作りは、本当に終わりがないです」

Thirty minutes before opening, the VIRTÙ team gathers for their daily meeting. Alongside updates on reservations, about guests, and the evening ahead, there is one tradition they always keep.

“Everyone has a moment to speak,” SAKURA explains. “It can be about work, something we want to improve, a great bar we visited recently, what we had for breakfast, or even a date from the night before. There’s always a little laughter mixed in.”

When asked about the funniest recent story, SAKURA simply laughs. “That one definitely can’t be shared.”

Those lively thirty minutes set the rhythm for the night ahead, bringing the team together before the first guests arrive.

営業開始の30分前。毎日、チームみんなが集まりミーティングが行われています。そこで話し合われていることは何か、SAKURAに聞きました。

「1日の目標やお客さんの数、情報の確認とか、業務事項を共有した後に、必ずひとりひとりが喋る時間があります。内容は何でもよくて、改善点とか、昨日デートに行ったとか、朝ごはんに何食べたか、最近行ったあのバーがよかったとか、色んなことを全員が話します。基本は業務内のことですけど、ちょろっとプライベートの話も混じってひと笑いある感じです」

最近あった面白かった話は？との質問には、「それは本当に出せないような話で（笑）」とのこと。そんな和気藹々とした30分のミーティングが、VIRTÙの毎日の盛り上がりのウォームアップになっているのです。

Few cocktails reveal the importance of detail quite like a highball. The Signature Highball is shaped through careful attention to every element, from the ice to the timing of each stir.

At its heart is a house-made umeshu crafted with ripe plums from Wakayama. Combined with Japanese whisky and hinoki bitters, it creates a highball with layered depth and remarkable clarity.

The gentle acidity of plum and its delicate fruit aroma bring a refreshing lift, making it especially fitting for the start of early summer evenings.

ハイボールというシンプルなカクテルほど、細部までのこだわりが飲み心地を左右します。「シグネチャーハイボール」は、自家製梅酒が決め手なのはもちろん、氷も、混ぜるタイミングも、ベストの一杯のため。

結果、和歌山から取り寄せる完熟梅で作る梅酒に、国産ウイスキーと檜ビターが絶妙に融合し、これまでにないハイボールとなっています。梅のほのかな酸味とフルーティーな香りが効いたハイボールは、初夏のはじめの一杯にも最適です。

@kimuragraham running a shaved ice stand? Not quite. From May 11, we introduce a Strawberry Kakigori Daiquiri.

Freshly shaved ice is layered with Strawberry Wonder, a liqueur made by slowly reducing premium “Kotoka” strawberries to capture their depth and sweetness. Okinawan rum, wasanbon sugar, citrus, and a touch of balsamic come together to shape a daiquiri you can experience by the spoonful.
The result is bright and indulgent. Concentrated strawberry sweetness meets the fleeting texture of ice, melting gently with each bite.
As the days grow warmer, it’s a refreshing way to ease into the season.
