A feature dish from my first ever omakase at the store: the chirashi donut.
I want to both revisit this one and bring back the donuts. It’s a fun concept and I’d like to see how differently I’d handle it three years later. I also want to make the actual dish I was supposed to make instead of this one, lol.

Kaphé Muna, Tayo!
The latest entry into my fish & ice cream series: Unagi Baked Alaska.
What started as one man’s dream to see li hing mui in a poke bowl has now become my own desire to present seafood in ways that challenge people to think about what should and shouldn’t be on their plates, and putting seafood in their desserts has been a fun way to do that.
The unagi baked alaska is the latest entry to that end, and it’s the current best dessert I have to offer. It has the bbq eel that everyone loves, banana turon crunch ice cream from @stellajeansicecream , and a pound cake and banana meringue from @hey_docinhosd . topped with eel sauce and sesame seeds.
For everyone that’s tried my dessert handrolls at the store, this is the next step up from that. I have some notes on how to improve it (including adding the flambé component), and I can’t wait until more people get to try it.
This one was served as the final course in last night’s private dinner, so if you want to try it for yourself before I figure out how to make it available at the store, DM me to book your own private dinner with me. Otherwise I’ll see you all this week at the store on tuesday and thursday from open to close 🫡

the thresher shark linguiça from @tunavillemarketandgrocery is one of my favorite ingredients to share with people, and yesterday I landed on my current favorite way to serve it.
I marinated the linguiça in chili oil, cornhub hot sauce and mango raspberry jam before air frying it, then mashed my herbed coconut ramp sauce with avocado to make a guacamole, then served the two with a bag of shio doritos. topped with more jam, shallots and lime juice.
I’ll be serving this on special next week on tuesday and thursday if you want to try it yourself. at the store from open to close 🦈

A lot of people ask us why we don’t expand the sushi bar to accommodate more diners. The main reason is because we’re primarily a catering business that handles orders like these behind the scenes, and we bring our full sushi bar setup to parties with hundreds if not thousands of guests on a regular basis. With that, the intimate six top bar in the back of the store is more than enough for us.
That said, we do offer after hours private dinner packages at the store and it’s the best way to experience a sushi night with us. Whether it’s just a few friends or a party of 30, a casual banquet service or full-blown omakase, this is our real specialty. So if you ever find yourself dining at our store wanting a more private experience where you can bring all your people and we can go all out, let me know and we can figure something out.

The Cornhub hot sauce from @down2ferment is one of my favorites out there right now. The roasted corn/elote flavor has been a fun one to play with behind the sushi bar, and I especially enjoy pairing it with salmon and unagi.
