This collaboration came to life as part of a long-held idea—to give back to PPL’s customers through a special event. The proposal was to offer vegan and gluten-free sweets, which are not part of their usual lineup.
Until now, I had never seriously engaged in making vegan sweets. I had tried a few times before, but the results never turned out as I hoped. They didn’t feel aligned with my style, and the taste didn’t appeal to me. My impression of vegan sweets at the time was that they tended to be heavy in texture, overly sweet, and too rich in fats. While there are now truly delicious vegan sweets available, I’ve often felt that the variety remains limited compared to traditional confections, and many rely heavily on chocolate to mask flavors.
To me, the most difficult part of making vegan sweets is finding ingredients that can replicate the airy texture that eggs provide. For this project, I primarily used ingredients such as soy lecithin to achieve a light texture, forms similar to my usual takeaway sweets, and new flavor combinations. I believe I was able to create products that are both vegan and gluten-free, yet still very much reflective of my own style.

I am deeply grateful to PPL and their team for giving me this opportunity. It has expanded the scope of my creativity. More than anything, I hope the customers of PPL—and everyone—will enjoy these sweets.
