Celebrating London’s hardest-working pollinators 🐝🍯

For World Bee Day, we’re celebrating the bees behind the honey. Nicole, Rhubarb’s Pastry Sous Chef, gives a closer look into how concepts are developed, showcasing two dessert canapé concepts using honey from @london_honey_co sourced from hives perched across London rooftops 💛🌼✨

Bees need plenty of space to forage nectar and pollen from different flowers and plants. We can help by creating bee-friendly spaces through diverse, pesticide-free flowers and leaving some wild areas unmown to protect these vital pollinators 🌱🌻

Using every part of the carrot, from tops to skins, the tart features salt-baked carrot, carrot purée, carrot top salsa verde, carrot dust, oat crème fraîche & carrot top oil.

This week, our team had the opportunity to cater one of the largest dinner services to date at Moco Museum London @mocomuseum 🎨🩷

Moco Museum is known for showcasing modern and contemporary art from some of the world’s most celebrated artists, and we had the incredible opportunity to create a bespoke 60-guest fine dining experience.

Guests were welcomed with signature canapés and drinks before starting with La Latteria burrata foam, Heirloom tomatoes, basil oil & foraged herbs.

The evening continued with a perfectly balanced spring dish of fine herb gnocchi with seasonal vegetables, wild mushroom & truffle dressing, before finishing with our Millionaire’s dessert, bitter chocolate mousse, salted caramel ice cream & rich chocolate layers for the perfect decadent ending 🍫
