grateful for this moment with Justin.
a few years ago, Garrett and Justin came to Thirds for dinner. at some point in the night i brought out two of my “snowflake” bottles of Soma no Tengu, a sake that has perplexed me over the years for occasionally presenting some of the most dramatic bottle-to-bottle variation i’ve tasted with out of control lactic acid bacteria inarguably having ‘spoiled’ the sake. yet months and even years later after opening, left untouched and unfrigerated, these bottles would evolve— not quite healing themselves and definitely still not ‘correct’— but, surprisingly, upon revisiting a few had transformed into something else almost vinous in acid and structure. eventually i rounded up all the open bottles i had stashed and laid them all out on the table. six bottles, same sake, opened various times between 2019 and 2021, each its own unique snowflake. fringe and experimental doesn’t begin to capture the irrationality of this tasting. yet here i was with two heros pouring them what everyone else would consider trash. did we figure out what was going on in these bottles? not really. but we sure did enjoy the hell out of the experience and we enjoyed being together.

Justin was generous with his talent, his time, and his friendship. i’m sad that we’ve lost him and remain in awe of his impact. i’m thankful not only to remember these once-in-a-lifetime encounters but also grateful we’ll be able to continue connecting with his spirit through the monumental legacy he gifted all of us.

OVERCOAT was launched by patternmaker Ryuhei Oomaru based on the theory that the design of a garment should be generated by its underlying structure. The collection comprises of one-of-a-kind clothing pieces made in the New York studio, as well as pieces for everyday wear made in Japan with wools and blends often used in military and school uniforms.

Daiginjo’ and ‘Yamahai Ginjo Genshu’ brews of Yokawa AAA sake rice from as far back as 2002 (grown 19 years ago!!), poured alongside a very ‘of-the-moment’ food pairing lovingly cooked up by @2le_jt.
