From Wazuka, we sourced a single-cultivar, samidori, grown at Obubu Tea Farms under the care of Akihiro Kita. Cultivated on steep valley slopes and shaded through long summer light, this tea develops slowly and deliberately, resulting in a matcha that is is elegant, mature, and deeply rooted in this region’s landscape and philosophy.
Second is our toyomukashi matcha, which comes from Shogyokuen, a family-run Uji tea house stewarding tea cultivation and blending across generations since 1827. Extended shading and deliberate steaming lend the tea its depth and composure. The cup feels grounded and bright in a way that unfolds rather than announces itself. We’re so honored to be partnered with them!
Last but not least, is a beloved matcha created in private collaboration with Marusan Koroen, a historic Uji tea producer who works closely with a collective of partner farms along the Uji river. This producer has crafted a blend exclusively for Iris Coffee Lab and it has become a joy to watch this matcha take root at 725 Tucker Street and be embraced by the Raleigh community.

We had the pleasure of collaborating with Hellbent to bring you two spring ready creations: the beloved mango sticky rice matcha and a baklava cold brew by @iriscoffeelab topped with pistachio cream.
Watching a line form down the alley, seeing familiar faces, greeting so many new ones, writing your names and orders on those little guest checks, and seeing everyone’s excitement as they sip matcha and wander around the shops reminded us exactly why we do this.
North Hills has built something special with this community of small businesses, and we’re honored to have been a part of it, even just for a day.

A short matcha latte at @iriscoffeelab.
Sourced through a collective of small tea farms in Uji, “For Iris” is a blend of saemidori and okumidori cultivars. I tasted more than a dozen expressions in search of something that could stand on its own, yet soften beautifully with milk. More than anything, I was drawn to a floral presence; quiet, lingering, unmistakable. Much like Iris itself.
Iris is shaped by scent: flowers throughout the space, floral undertones in items on the menu, lightly roasted coffee, and a fragrant hand wash that signals care in even the smallest details. This blend was chosen to mirror that sensibility: to transform a matcha latte into something impressionable, aromatic, and lasting.
For Iris is creamy and nutty, reminiscent of cashew, with a clear umami presence; evoking cooked zucchini and a soft aroma of rose petal. It has become a joy to watch this matcha take root at 725 Tucker Street and be embraced by the Raleigh community.
