We’re starting with @drew.snaith, who has served up a smoked beef cheek with oyster sauce bordelaise, cauliflower and beef fat palmier. An absolute triumph from start to finish, this involved yet rewarding beef cheek recipe is all about building layers and layers of intense flavour through reduction and long, slow cooking. The cheeks sit in a knockout sauce, enriched with bone marrow and given depth with @lkkeurope’s Oyster Sauce. 🤤

Drew Snaith (FKA Sesta) X Papi - Saturday 31st 12 - Late
The a la carte menu of your dreams! Scotch olives return, naturally, but there’s also a scone that was passed down from Drew’s grandma, straight to him! Making it one of the oldest scones in east London by anyone’s count.
There’s space for lunch and tiny spaces at dinner! Either you’re sleeping or your booking, there is no middle ground.

The first of Papi’s final tour event series begins with your friend and mine Drew Snaith who will be taking over the pots and indeed pans on the very final day of January, for one day only.
In December Drew closed the stunning Sesta, but this has not damped his desire to scotch every olive that crosses his path.
Expect a menu that brings both Papi and sesta classics together to create something new and more powerful, think of Drew and Matthew doing 360 spins in the kitchen, whirling like Dervishs as dishes fly out (in an elegant and organised way.)
It’s going to be a case an a la carte menu with food from 12 to well after darkness falls.

Drew’s serving up brined quail with crispy stuffed legs, glazed in a rich blackberry taro made using @lkkeurope’s Vegetarian Stir-fry Sauce. Paired with redgauge ketchup, grilled broccoli and broad beans, it’s a refined, flavour-forward plate that showcases the sauce’s incredible versatility.
Drew will be facing off against competitor chef @guirongwei 🟡 who will be bringing something completely different to the table using the Vegetarian Stir-fry Sauce.
