At Dhamaka, each ingredient has a purposeful flavor and rich history tied to it. The condiments that pair with a dish aren’t random - instead, they’re extremely intentional, and tested over months (sometimes years) to ensure the most ideal combo.
Today, we’re diving into “Thecha” - the condiment paired with our Tawa Tamatar Pulao. Techa is derived from the Marathi phrase “to pound”; and as shown, is traditionally made by grinding fresh green chilies, garlic, peanuts, and salt.

Goat Neck Biryani.
In many parts of India, the neck is one of the most prized cuts. It’s a working muscle that slowly breaks down into gelatin as it cooks, giving the meat and rice a deeper, almost silken feel.
Biryani itself is layered cooking at its core, and here aged basmati is key. As rice ages, it loses moisture, which allows each grain to cook longer and absorb more flavor.

Paneer tikka comes from the tandoor culture of North India, where fresh paneer could handle high heat without melting, picking up smoke, char, and spice in the process 🔥
At Dhamaka, we make our paneer in-house, then marinate it in garam masala yogurt before hitting the heat. The yogurt tenderizes and carries the spice deep into the cheese while the heat caramelizes the edges and chars the masala onto the surface.
The result is perfectly soft inside and smoky outside. Just the way paneer should taste 😉

From Goa to Maharashtra to the fishing communities of Kerala, pomfret has long been prized for its soft, flavorful flesh and ability to hold on to spice. 🌶️
This one gets rubbed with ginger, garlic, turmeric, chili, and coastal spices, then coated in besan and rawa before hitting the pan. The semolina is key, frying into a crunchy, deeply crisp crust.
