GINGER & SPRING ONION FISH DUMPLINGS 🥟🐟🍷 Light, fragrant dumplings in a simple soy broth, paired with a fresh Sidewood Pinot Gris, one of danmurphy’s Best In Glass Awards winners! It’s citrusy, floral and really easy-drinking, which makes it perfect for dishes like this that are clean and delicate! The Best in Glass Wine Awards helps you find the right wine for the right time. Serves 2 - 3
- 20–24 wonton wrappers
Dumpling Filling
- 250g white fish fillets (snapper, barramundi or flathead), finely chopped
- 250g prawn meat, chopped
- 1 egg white
- 1 tbsp Chinese cooking wine
- 1 tbsp ginger, finely minced
- 2 tbsp spring onion, finely sliced
- 1 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- ½ tsp salt
- ¼ tsp white pepper
- 2 tsp cornflour
Broth
- 750ml chicken stock (or a light fish stock)
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tsp ginger, finely sliced
- Pinch of ground white pepper
To finish
- Extra spring onion, sliced
- Chilli oil, to drizzle
Pulse the fish with egg white and Chinese cooking wine until a paste forms, then mix with prawns and the remaining filling ingredients. Place about a tablespoon of filling in each wrapper, wet the edges, fold and pleat to seal.
Bring the stock to a gentle simmer with soy sauce, sesame oil, ginger and white pepper. Cook dumplings in the broth for 5 - 10 minutes until they float and are cooked through.
Divide dumplings into bowls, ladle over the broth and finish with spring onion and chilli oil. Serve straight away with a glass of Sidewood Pinot Gris.

Ingredients:
40mL London dry gin
20mL sweet vermouth
30mL pomegranate juice
15mL lemon juice
15mL sugar syrup
Garnish: lemon wedge and pomegranate seeds
Glass: highball
Method:
1. Add all ingredients to your glass
2. Fill the glass one-third of the way with crushed ice
3. Swizzle well with a bar spoon
4. Top the glass with crushed ice
5. Garnish with the lemon and pomegranate
