Eduardo, head bartender at Corrochio’s, blending Filipino and Mexican flavours into something completely unique.
Sol y Luna — a cocktail built on contrast. Dark ube-infused London brandy against bright coconut tequila, layered with yuzu, toasted black rice, mango foam, and nutty depth running through the whole drink.
Sous vide infusions, toasted coconut, vacuum-sealed spirits… every part of it dialled in.
The result feels almost surreal — rich, tropical, smoky, vibrant.

What a year it’s been - 365 days (and then some) around the sun.
Next week we’ll be throwing a hell of a birthday bash, with £5 mezcales from @mezcalderrumbes , £5 cervezas, £8 Doña Mago @raicillalavenenosa cocktails, and £10 Cajita Feliz “Happy Meals” - a Mini Birria Taco, a copita of Derrumbes Oaxaca mezcal, and a cerveza. We’ll have a whole bunch of free birthday conchas from our friends at @sweetnibblemx , although not sure how long they’ll last so you best get in early!
Thank you to everyone who has made our little house a home again, it’s been such a fun year of shaking cocktails and sharing agave spirits with you all, and thankful for the opportunity to continue doing what we love 💛
We’ll be taking bookings for the party but they aren’t necessary, feel free to just rock up to enjoy some great drinks and fun birthday vibes. We’ll be open 6 til late. See you next Wednesday 1st April - we promise it’s not a joke!

Chef’s Table - Tequila Fortaleza X Daniel Carrillo X Ramón El Tigre Ramos
Daniel Carrillo @chefcorrochio (Corrochio’s) & Ramón El Tigre Ramos @tigrecetas (Nine Lives) are joining forces on Wednesday the 13th May for an intimate Chef’s Table event, with special drink pairing by Tequila Fortaleza @drinkfortaleza created by Brand Ambassador Andrés Moran @bittercool .
The two Guadalajara natives have created a 5-course seafood menu inspired by their upbringing in the city, and their love for for the coastal shores of Mexico.
While Ramón grew up working in his family seafood restaurant, Los Barcos Mariscos, Daniel spent many childhood vacations on the coast of Jalisco and Nayarit, cooking their freshly-caught seafood on the beach.
We can’t wait to share this intimate family-style dining with you, hosted downstairs in Corrochio’s speakeasy agave bar Cinco @corrochios.cinco , transporting you to the comedor of Daniel & Ramón’s family homes.

Hot! Tasty! Filthy!
You want it, your grandma wants it, everyone wants it-Tequila!
This drink pays an homage to the heart of Mexico, infused with the rich traditional sauce MOLE that doesn’t follow a real recipe. So I made my own recipe to share with you all.
Getting inspiration from Corrochio’s kitchen, a banging Mexican restaurant with authentic traditional food from Guadalajara and more.
In La vida , I’m bringing Patron Reposado as the protagonist with its vanilla and honey forward flavours that mix deliciously with the notes of MOLE - all in a smoke infused glass.

At the end of November we had the privilege of hosting our first ever international (!!!) takeover in the most beautiful venue - @donda_khana - in 🇩🇰 Copenhagen, thanks @kochelmezcal
We had a 5-course set menu of some of @corrochios greatest hits, including our XO Taco, Tostada de Camaron, and Califa Taco.
The cocktail menu - curated by @corrochios.cinco with @el_mental_bykoch mezcal - featured our signature El Rey, alongside some new drinks we hope to launch on the Cinco menu this month.
Rewind 4 years, Corrochio’s was just shy of 8 weeks open in a little 30-capacity bar-turned-resturant basement space in Dalston. The Koch Espadin was one of only 5 mezcal we had on the backbar, and we had a total of 10 dishes on the entire food menu.
Never in our wildest dreams would we had imagined we’d be given the opportunity to one day serve Corrochio’s food & drinks in another restaurant, overseas. Mind blowing, really! Still can’t believe we got to do something so fun.
This experience is not without (a lot!) of thank you’s.

Rewind 4 years, Corrochio’s was just shy of 8 weeks open in a little 30-capacity bar-turned-resturant basement space in Dalston. The Koch Espadin was one of only 5 mezcal we had on the backbar, and we had a total of 10 dishes on the entire food menu.
Never in our wildest dreams would we had imagined we’d be given the opportunity to one day serve Corrochio’s food & drinks in another restaurant, overseas. Mind blowing, really! Still can’t believe we got to do something so fun.
This experience is not without (a lot!) of thank you’s.
To the Donda familia. @instaqasim for trusting us in your home, and the wonderful support and hard work of the FOH & kitchen teams who helped deliver the Corrochio’s experience on the night.
To @ed_weirdooo - our head bartender in Cinco - who still managed to travel, and smash out 140 cocktails, despite almost losing his index finger (who we affectionately named Carlos) a week earlier. If you look close enough you can see Carlos 😂
Of course, none of this could have been possible without @kochelmezcal @el_mental_bykoch @mezcal_wario @sprit_co @the_hungry_cocktail_guy,and Oscar for bringing extra bottles of Koch at the 11th hour for our agave-loving guests!

At the end of November we had the privilege of hosting our first ever international (!!!) takeover in the most beautiful venue - @donda_khana - in 🇩🇰 Copenhagen, thanks @kochelmezcal
We had a 5-course set menu of some of @corrochios greatest hits, including our XO Taco, Tostada de Camaron, and Califa Taco.
The cocktail menu - curated by @corrochios.cinco with @el_mental_bykoch mezcal - featured our signature El Rey, alongside some new drinks we hope to launch on the Cinco menu this month.
