Receiving the MICHELIN Green Star is a huge honor for us, but it’s also a big responsibility. After 12 years of pushing boundaries and innovating with local ingredients, this recognition feels incredibly motivating, and it gives us the energy we need to take our efforts further.

Our philosophy continues to be redefining luxury through local and endemic produce. While we’re really proud of this journey, we also know there’s always room for growth. This recognition is fueling our passion as we develop our next menu about heirloom rice, and we’re excited to keep moving forward.

However, this is not possible without all your support, and we want to keep on sharing more interesting experiences with you. Our hearts are bursting with gratitude. We happily accept our 2 stars- one for the restaurant and one green star for our sustainable efforts. and we thank everyone who has worked in the restaurant for the entire 12 years of operation without which this recognition will not be possible, especially chef Chele Gonzalez and his partner in the kitchen chef Carlos Villaflor, as well as head chef Ian Udtujan and longtime manager Anne Bestoso.

Our immense gratitude goes out to Carlo Calma and the entire Calma family for believing in this project since day one.

Gallery by Chele has always been a love letter to the Philippines, and this recognition is not an individual award but something that we share with the whole industry. TERRA NOVA was a collaborative dinner organized by Michelin Guide, Visa, and UnionBank — a special experience months in the making alongside Chef Gerard from Elements. Together, we explored the richness and potential of Filipino ingredients through the artistry of French cuisine.

The vision was to introduce Chef Gerard to the beautiful produce found across our archipelago and create a menu exclusively for this evening, celebrating unique dishes inspired by these discoveries.

At Asador Alfonso, we believe the experience begins long before the first course is served.

After the drive from the city, we wanted our guests to have a space to pause, relax, and reconnect with nature before dinner. Designed by Carlo Calma, “The Lagoon” is an architectural sanctuary nestled within the water, a place where art, design, and nature beautifully coexist.
Here, guests are welcomed with light appetizers and our homemade vermouth as they ease into the evening before entering Asador Alfonso.

J'ai eu le privilège de goûter, vendredi dernier, à un menu dégustation exceptionnel, fruit d'une collaboration unique avec un chef invité détenant 2 étoiles Michelin, @chefchelegonzalez .

Le mélange entre la finesse de la gastronomie québécoise et les vibrantes influences internationales du chef était tout simplement explosif en bouche. ✨

​De l'entrée rafraîchissante au Kinilaw jusqu'au Wagyu fondant à la truffe, chaque plat (surtout avec l'accord vins 🍷) était un véritable chef-d'œuvre.

We are always inspired by the local tradition of kinilaw, and over the years, we have reimagined it through various elaborations using many different ingredients.

For this specific dish, a house-crafted mirin is at the heart of this recipe, created by inoculating glutinous heirloom rice with koji to transform starches into rich, fermentable sugars. We top it with a granita made from the same fermentation to bring a complex acidity that balances the plate. We also use local and endemic produce such as dayap and pili nuts for some texture, and finish it with a touch of local patis for a bit of umami. This is something fresh and vibrant to start your dining experience at Gallery by Chele.

At the heart of this dish is Unoy rice, an heirloom grain from the mountains of Pasil, Kalinga. Certified by “Slow Food”, a global movement that advocates biological and cultural diversity, Unoy is one of the Philippines' finest rice varieties, grown using responsible practices developed throughout the generations. 🌾✨️💯

This dish bridges local tradition with global culinary techniques featuring rich, umami, and deeply comforting, layered flavors. It highlights a slow-cooked abalone together with a rich broth crafted from lobster heads and shells, Kiniing (smoky Cordilleran pork), a velvety chicken demi-glace, and Unoy rice infused with classic arroz caldo aromatics, such as lemongrass, ginger, and garlic.

My passion for electronic music started in the early 90s — going clubbing and attending underground raves during the birth of house and techno music.
It felt like a natural progression to start playing records myself in 1997 while living in the US. I would often spend hours on Haight Street in San Francisco digging through vinyl in different record stores, discovering sounds that would shape my musical journey for years to come.

This Saturday, May 16, we begin our first vinyl night at @nokal.manila and it feels incredibly special. Joining us is Pablo Bolívar from my hometown, one of the most reputable dj’s in Spain and someone I’ve known and shared music with for more than two decades, together with DJ Kuze from San Francisco.

It feels like everything has come full circle for what promises to be a magical night at Nokal. ✨
