There’s a new addition to our Big Green Egg bases… the Teak Kitchen.
Food writer @gluts_gluttony created her Kale Pesto and Charred Veg Flatbreads at our HQ on our new base, the Teak Kitchen. She grilled crunchy summer vegetables with a delicious hint of char, tucked into soft flatbreads with flavour-packed pesto.
She then recreated the recipe at the RHS Chelsea Flower Show, cooking on the EGG in Tales from the Riverbank, the gold medal-winning houseboat garden created by @kennedys_gardendesignstudio , Susie Kennedy and Kate Henning.

Steak au Poivre on my @biggreenegguk | AD
I’ve used the reverse cooking technique with the convEGGtor in place before getting the steak straight onto the coals to get a lovely crust with dirty cooking.
Ingredients
* Steak - 750g
* Pepper corns - mixed 3 tbsp
* Salt
* Oil
* Shallots - 2 (finely diced)
* Garlic cloves - 4 (bashed)
* Brandy - 50ml
* Beef stock - 500ml
* Cream - 50ml
* Green peppercorns - 1 tbsp
1. Preheat your Big Green Egg to 120-130°C with the convEGGtor in place.
2. Add the mixed peppercorns to a heat-proof pan and place on the grill to toast for a few minutes. Add to a pestle and mortar and roughly grind to a course texture
3. Season the steak all over with salt and ⅓ of these peppercorns.
4. Place the steak on the grill for about 30-45 minutes until it reaches an internal temperature of 45°C
5. Meanwhile, make the sauce. Add 1 tbsp oil to a pan on medium-high heat. Add shallots and garlic and cook until soft.
6. Add the brandy - take care when doing this as it will flambe if it touches the flames. Flambe helps to cook off the alcohol a bit quicker but the alcohol will cook off during the cooking of the sauce anyway.
7. Add in the rest of the ground peppercorns along with beef stock. Reduce by half then add in cream and green peppercorns. Set the sauce aside.
8. When the steak reaches about 45°C internal temperature set aside to rest for 10-15 minutes.
9. Just before you’re ready to eat, remove the convEGGtor and the grill and bring the Big Green Egg up to a higher temperature - about 250°C. Place the steak directly over the charcoal until it gets a lovely crust all over.
10. Warm the sauce, cut the steak and cover it in the sauce.

Venison Flatbreads w/ Charred Jalapeño Salsa
This right here is a beautiful dish, cooked on the Big Green Egg Minimax that puts the spotlight on Wild Scottish Venison.
If you haven’t tried venison before, hopefully this can tempt you. A beautiful lean nutrient dense meat that is incredibly tender when cooked right.
Don’t forget to char your vegetables too, cooked them hot and fast, allowing the skin to char. Roughly chop everything together, combining oil, lime juice, msg and seasoning. It’s sharp, it’s punchy and so so good.
When it comes to cooking venison, it’s best served nice and pink. Try and aim for around 45c before letting it rest for best results.

Exploring Cornwall just got a serious upgrade thanks to this dream setup with the new @forduk Ranger PHEV, converted by @blok.pod into the ultimate coastal cooking truck. Complete with a @biggreenegguk induction hob, hot water for proper hand washing and cooking hygienically, plus even a shower for rinsing off after paddle boarding, it’s basically a galley kitchen on wheels.

The oak trim and stainless steel worktops give it that perfect coastal kitchen feel and everything fits snugly into the back of the Ranger. The roofbox is packed and ready for plenty more adventures across Cornwall and the South West.
This trip was all about slowing down and making the most of an evening at @readymoneybeachshop. I gathered a bit of driftwood, fired up the Egg and cooked piri piri chicken tacos with British asparagus and homegrown radishes for my girls while soaking up the sea views. Hard to beat cooking outdoors with the sound of the water nearby.
Of course, no trip to Ready Money Beach is complete without stopping by The Beach Café for an ice cream and a coffee. Brilliant little spot with loads of local artwork, souvenirs and one of the best views around.
Finished the day with a paddle board session which felt like the perfect way to unwind after cooking.
