One “bad” vintages… often the “bad” vintages are just opportunities for the best farmers and winemakers to shine. It’s obviously much more hard work and far more stressful in rainy and cold years for #pinotnoir farmers, a small and moldy harvest makes much less wine than a large and ripe one, but for steadfast farmers like @chandon.de.briailles committed to biodiversity in their vineyards a “bad” vintage can produce an incredibly elegant and ethereal wine!

Oh. And do go to @lacavepaulbert for oysters and champagne before heading next door for a legendary steak au poive et frites @bistrotpaulbert If you get there soon ask for the 21 @chandon.de.briailles Savigny, we were told there was only one bottle left!

Fantastic experience @chartreuse.fr in their Parisian 6th arr. cellar. Pictured here: 4 vintages of Chartreuse verte; 2025, 2015, 2005, 1995. Our favorite was 2005 with the lime turned down, saffron & tarragon up! 1995 was really interesting as well, imagine a chocolate lime truffle with white pepper; definitely the most mellow. Shoutout to @madremezcal proudly displayed on the bar when we arrived, definitely my favorite #nakedandfamous mezcal!
