New month, new challenge! And this time there are MORE ways to win! Bagels have been on my mind lately because I’ve always made them with all white bread flour. This month I’m going to challenge myself to incorporate more whole grains into them and finally give up the hole poke method. Flour 🌾 Water 💦 Salt 🧂…

No shortcuts, no secrets. Just consistency, patience, and showing up week after week.

It never gets old, lifting the lid, seeing the oven spring, the crust, the ear 🤩. That moment feels like magic every single time.

Simple ingredients, intentional process and beautiful results.

And btw…
My bread is not raw.
Not underbaked.
Not anemic.
Not pale.
Not “still doughy in the middle” 🤣

It’s just halfway through baking 😉Trust the process. The color comes later.

There is nothing more satisfying than watching a design expand exactly the way you planned. The oval shape of the Krustic baker is perfect for maximizing the length of a batard, giving that central expansion score plenty of room to open up beautifully.

Let’s talk HEAT 😭☀️🍞Everything in my kitchen is amazing up to like… 80°F 😂

But once it hits 85°F and up? My kitchen becomes the least pleasant place to be in. Add the oven running at 460°F and suddenly the whole house feels like a bakery sauna 😮‍💨

So if you have AC in your kitchen… good for you 👀✨ because over here, everything gets transferred to the dining room before my starter and dough turn into a soupy mess in minutes 😂.

Summer completely changes my sourdough schedule. I can’t feed my starter at night anymore because by the time I wake up, it’s already past peak (and yes… I even tried freezing water 😭).

So now I feed my starter first thing in the morning and it becomes active SO fast. The whole process moves quicker:
✨ coil folds every 20 minutes
✨ a few extra folds
✨ then usually just about an hour before shaping and placing in the fridge

A completely different rhythm than winter baking. Honestly, last summer was CHAOS 😂 but I learned so much from it.

And I think this is something really important to remember with sourdough:

Sourdough is practice, observation, learning your dough, your kitchen, your ingredients, your weather, and how everything behaves in YOUR environment.

Yes, you can absolutely follow someone else’s recipe 💛 but then adjust it to what works for you.

So don’t stress if your loaves don’t look exactly like someone else’s online.

Focus on learning, enjoying the process, understanding your dough and creating beautiful loaves that work for YOUR life and YOUR home.

That’s where the magic really happens 💛🍞✨
