Disgorgement 🍾
AKA the coolest way to clarify wine!
First we freeze the neck of the bottle where our solids have collected
.
Then we pop the crown cap and the bottle’s pressure pushes the frozen solids out of the bottle. We then add a small amount of sugar, called a dosage, to balance the wine’s natural acidity
.
Then we seal the bottle with a special cork and wire hood that can handle the bottle’s internal pressure.
