Some use a piping bag to pipe buttercream (or other medium) all around the cake whilst others prefer a spatula.
I alternate between the two but I find the piping bag method leaves a more even amount on the cake/dummy. Plus, it's better for your shoulder & arm without the awkward bending over and around the cake.

This 3-tiered cake dummy was covered in my signature buttercream for a private cake decorating masterclass.

I used @prop.options Cake Compass to secure the entire display - including the cake board/drum that is inserted directly onto it! Fast, secure and effective! I wouldn't recommend this for a real cake as the holes on the bottom of the cake drum won't be covered.
