We’ve collaborated with wineries before, but never quite like this. For the first time, we are finishing a 5-year Dark Door Bourbon in Cabernet Sauvignon barrels from our friends at Passing Time.
Normally, we do this with a 3-year bourbon, but we decided to let this one rest longer. The result? An epic fusion of Washington artisanal grains and elite viticulture.
The only downside to that extra aging? The Angels' Share. After 5 years, the angels have taken a massive cut, leaving us with a highly concentrated, yet very limited, supply. 👼💨

A major milestone on the line today: we just hit Batch number 100 of Kur Gin!
That represents over 25,000 bottles filled, labeled, and shared since we started this journey. But the number we’re proudest of isn't the bottle count—it’s the consistency. Because we distill each of our seven seasonal botanicals individually before blending the fractions together, Batch number 100 tastes exactly the same as Batch number 1.
It’s a meticulous, labor-intensive method, but keeping that crisp, local character identical from year to year is why we do it.
