Clementine Cake

We’ve had a crazy abundant crop of clementines on our trees this year which left me wondering what to do with all of them.In harvesting a few baskets, I remembered that one of my favorite movies had a subplot centered around a slice of clementine cake. Naturally, I had to give that a try.

In this version, which I based on @nigellalawson’s recipe, I added a little bit of honey to the batter and a dusting of powdered sugar.The result is a sweet and citrusy that is surprisingly moist and light.Many thanks to Nigella and Walter for the inspiration.

I was playing around with flavor profiles today and came up with this AMAZING twist on the classic blueberry muffin.The muffins are fluffy, moist, and with an incredible depth of flavor. The demerara sugar adds a perfect crunch to the crown without making the muffins overly sweet.I highly recommend grabbing the recipe on this one!

I’m posting this early on a cold Sunday so you have enough time to enjoy it for dinner if you’re so inclined. (Though chili is always better the next day).

It’s easy to adjust the heat on this by increasing or reducing the chipotles used. You can also get it nice and thick by letting it simmer uncovered and extra 10 minutes at the end.

Now for the serious part….

In 30 years of marriage, our longest running debate is which utensil is the most appropriate for eating chili - a spoon or a fork. Which utensil do you use?
