🌱Oui Non 2025
Freshly bottled and ready for your sun-kissed days bleeding into breezy nights, it’s Oui Non time! For this vintage, Oui Non consists of the usual fruit salad blend of red and white grapes with a few on-the-fly additions. Chardonnay and merlot are macerated together in whole clusters for a little over ten days, overlaid with some grüner veltliner. In addition, later picks of direct press pinot noir and macerated cayuga, topped off with muscat with some time on the skins and a touch of cabernet franc were included. Blended into two neutral 40hL oak foudres for the remainder of fermentation and élevage, and bottled in April of 2026.
This wine sets the stage for the vintage — well developed fruit character suspended in a bright and tense palate.
🚲 Tibo Pinot Noir 2024
The name for this cuvée began as an insider’s nod in the cellar — two barrels quickly tagged “tibo pinot” in 2023. Named for Thibaut Pinot, indisputably France’s finest cyclist, this pinot noir has range and momentum. It’s expressive of the vintage, as cliché as that may sound, and the 2024 began with a very healthy pick of fruit, a gentle stomp, and a gradual maceration. Thankfully the yields were generous, which allowed them to raise the wine in one of their beloved 18hL foudres. The élevage was simple with one racking in the spring, and eventually bottled without additions in the fall of 2025.
You’ll find all the classic notes of an ethereal pinot noir (rose petal, strawberries, black pepper) but with an unexpected, fresh liveliness and high-toned acidity.

BXT was created through the desire to explore Californian viticulture through the lens of traditionally made sparkling wine. Tom Sherwood, originally from Australia, has laid down family and winemaking roots in California over the past decade, and in short order, has produced some truly impressive wines. We're thrilled to bring them to New York for the first time.
Tom works with a number of parcels around northern California, with the majority of his plots farmed by his own hands, and located in and around Sonoma County. Most of his cuvées are single parcel wines, with the exception being his “California Immersion,” which is a house cuvée comprised of grapes from a handful of sites from passionate growers in the area. The entire project stems from the same mentality as the grower Champagne producers Tom admires and from whom he takes inspiration.
Grapes are hand picked, gently whole cluster pressed, and fermented in new and used french oak. The wine ages for 6-9 months in barrel prior to being bottled with yeast and a small amount of sugar. Secondary fermentation takes place in bottle and the wine is then left undisturbed until ready. Bottles are then hand riddled and disgorged on release.
The result are truly small batch, traditionally made sparkling wines that convey the true essence of California terroir.

TASTING TONIGHT 6-8! @BarbichetteWines
Natural Wine from NY; Grown in the Finger Lakes, Made in Brooklyn… What started as a side project between friends has grown into a full operation now with 7+ different cuvées. We’ll have 4 of the new (2024) releases open to taste tonight! Julian @terrestrialwine will be behind the bar pouring for you:
‘Nuit Blanche’ Riesling: A skin-contact Riesling with a golden honeycomb color and loads of tropical fruit.
‘Chette Baker’ Gewürztraminer: Sunset-orange skin-contact Gewürtz that’s pithy with citrus, apricot, flowers, and honey.
‘Tibo’ Pinot Noir: New York’s MVP (Most Valuable Pinot) lively and light with rose petal, strawberries and pepper.
‘Cache Cache’ Cabernet Sauvignon: Bright and juicy red with savory notes. Big enough for Sunday supper or the dessert cheese course.

After the tasting next Tuesday, catch the L train and meet us in the east village for a night of winemakers, big bottles, friends and records.
To celebrate 5 years of Terrestrial, our friends at Horse with no name are opening up for a special night of service, featuring four winemakers in attendance plus some special bottles suitcased back from France.

Tonight from 6-8! Come try three new releases from New York darlings Barbichette Wines! The brainchild of Brooklyn-based Cesar Vega & Louisiane Remy, Barbichette began as an experiment in making wine to share with family and friends. In 2019, Cesar and Louisiane were offered a small allotment of grapes from Seneca Lake in the Finger Lakes. Long inspired by the countless parallels between wine and specialty coffee, they made their first thirty cases of Riesling in a corner of their Brooklyn coffee roastery. The wines reflect the same spirit of precision and consistency in growing, harvesting, and processing that they brought to their much-acclaimed, vertically integrated coffee company, Cafe Integral.
Tonight’s line-up features the “Claro Que Si!” pet nat, the skin contact “Chette Baker” & the “Tete Beche” chillable red. The Riesling-based pet nat is crushable, fun & fruity with savory notes, while the Gewurtztraminer-based orange is pithy with citrus and apricot on the palate. The cool-climate Cabernet Franc is light, delicate, and ethereal in nature. Come and get ‘em while they’re still here!

Tonight’s line-up features the “Claro Que Si!” pet nat, the skin contact “Chette Baker” & the “Tete Beche” chillable red. The Riesling-based pet nat is crushable, fun & fruity with savory notes, while the Gewurtztraminer-based orange is pithy with citrus and apricot on the palate. The brainchild of Brooklyn-based Cesar Vega & Louisiane Remy, Barbichette began as an experiment in making wine to share with family and friends. In 2019, Cesar and Louisiane were offered a small allotment of grapes from Seneca Lake in the Finger Lakes.
