✨ Sun-Dried Tomato Pasta Salad ✨
Ingredients:
2 cups rotini
1/2 cup chopped cucumber
1/4 cup sliced red onion
 5 sun-dried tomatoes, chopped
1/4 cup chopped fresh mozzarella
Dressing:
3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
1 tablespoon maple syrup
1/4 teaspoon salt

Directions:
Cook rotini according to package instructions and let cool. Add pasta, cucumber, red onion, sun-dried tomatoes, and mozzarella to a large bowl. Whisk together dressing ingredients, pour over salad, and toss well. Serve immediately or refrigerate for 3–4 days.
