#Freshness matters- but not the way most people think.
There’s a common misconception that the fresher the coffee, the better. In reality, coffee needs a little time to rest. During roasting, beans release a significant amount of CO₂. If you brew too soon, that trapped gas can interfere with extraction, making it harder for water to pull out the full range of flavors.
The result? A cup that can taste muted, overly bright, or inconsistent - even when nothing else in your brew changes.
For best results, give your coffee about 1–2 weeks after the roast date. This resting period allows excess gas to escape, helping you achieve a more balanced, flavorful, and consistent cup. ☕️

The difference between a good cup of coffee and a truly exceptional one often starts at the very beginning — the moment the coffee cherry is picked.
Coffee cherries don’t all ripen at the same time. On a single branch, you’ll find green, underripe fruit, perfectly ripe deep-red cherries, and even overripe ones. That’s why timing is everything.
Only the ripest cherries hold the full expression of flavor — natural sweetness, balanced acidity, and the depth that makes each cup memorable. Pick them too early, and the coffee can taste flat or astringent. Too late, and you risk unwanted fermented notes.
That’s why careful hand-picking matters. Skilled pickers return to the same trees multiple times, selecting only cherries at their peak. It’s a slower process, but it ensures quality in every step that follows — from processing to roasting to your final cup.
Great coffee isn’t rushed. It’s chosen, one ripe cherry at a time.

The Natural process coffee is collected from a select group of quality coffee farmers in the Cerrado Mineiro region of Brazil and hand selected from the Catuai and Mondo Nova cultivars. These coffees produce a classic and consistent cup profile including chocolate, roasted hazelnuts and mixed red fruit. To balance the profile of the Natural coffee from Cerrado we blend it with a Pulped Natural that we procure from our partners in the Chapada region of Bahia. The Pulped Natural coffees are from the Bourbon cultivar and produce flavours of sweet honey/brown sugar/vanilla and subtle deeper fruits.
