No Sugar
Healthy Vegan Cookies
This recipe calls for 5 ingredients…all healthy:
INGREDIENTS:
1 cooked sweet potato
1 ripe banana mashed
1 1/4 cup oats
1 tablespoon peanut butter
1/2 cup chocolate chips

DIRECTIONS:
Preheat oven to 400 degrees
Mix all ingredients and form into one inch diameter balls
Place on a parchment lined baking sheet.
Press each ball with a fork
Bake for 12-15 minutes until cookies become golden brown.
Remove from oven and let cool before devouring them!

The older I get, the more I understand the women who came before me. 🙏🏻

My mother has always had a way of making people feel loved, welcomed, cared for, and somehow lighter just by being around her.

But what inspires me most about her is her strength.

After 67 years of marriage, losing my father, and leaving the country that had been her home for most of her life, she somehow found the courage to begin again in a new city, a new country, and a completely new chapter of life at 86 years old.

Through every challenge life has handed her, she continues to move forward with grace, resilience, humor, optimism, and yes… joy.

She is the emotional center of our family, an extraordinary role model, and truly one of the strongest women I have ever known.

Maybe the whole point is that we’re allowed to reinvent ourselves as many times as we want.

I’ve reinvented myself more times than I can count, and one of the most beautiful things about this stage of life is realizing it’s never too late to evolve into another version of yourself.

Maybe that’s why I love fashion so much. It’s always been a metaphor for reinvention. The same pieces can become something entirely different depending on how you style them… kind of like us.

This is what happens when you combine dates, almond butter, and cocoa powder… and yes, it’s as good as it looks.

No refined sugar—just the natural sweetness of dates. And somehow, it turns into something completely decadent.

Recipe:
• 1 cup Medjool dates (soaked in hot water until soft, then drained)
• 1/2 cup almond butter
• 1/4 cup cocoa powder

Blend until smooth, spread into a lined dish, and freeze until set.
Slice… and try not to eat the whole thing. 🤎

Covering my grays is non-negotiable for me—
