All our bowls and platters at New Bahru use pork jowl. A cut prized for its rich marbling, tender bite, and balanced ratio of meat and fat.

Batok’s 不见天 Char Siew uses an underarm cut, and both are prepared using the same roasting method, each suited to its own style and flavour profile.

When charred over fire, the pork jowl develops deep caramelisation and a light crisp around the edges, making it especially suited for a contemporary take on rice bowls and sharing platters.
