CHEF:IN Alex Strödel (@alex.strodel)liebt ihr Rührei schlotzig, Ei, Butter und Sahne in gleichen Teilen – wie mögt ihr es?

Hier kommt Alex‘ Rezept für 2 Personen:

Zutaten
* 6 Eier
* Salz
* 50 g Butter
* 60 g Sahne
* 2 Scheiben Sauerteigbrot
* 1 Knoblauchzehe
* 1 Stück würziger Bergkäse (empfohlen: 24 Monate gereifter Allgäuer Bergkäse)
* Schnittlauch
* Kala Namak Salz

Zubereitung

1. Die Eier in einer Schüssel mit einer Gabel luftig verquirlen und leicht salzen.
2. In einer Pfanne Butter und Sahne einmal aufkochen, dann die Hitze reduzieren.
3. Die verquirlten Eier dazugeben und die Masse mit Teigschaber oder Schneebesen sanft verrühren. Das Ei langsam von einem Rand der Pfanne zum anderen schieben. Darauf achten, dass es nicht anbäckt oder bräunt. Bei Bedarf die Hitze weiter reduzieren.
4. Sobald das Ei zu stocken beginnt und eine leicht glibberige Konsistenz erreicht, die Pfanne vom Herd nehmen und kurz ruhen lassen.
5. Das Sauerteigbrot mit etwas Butter in einer Pfanne von beiden Seiten goldbraun rösten. Herausnehmen und eine Seite mit der Knoblauchzehe abreiben.
6. Das Rührei in der Pfanne einmal wenden und großzügig auf dem Brot verteilen.
7. Nach Wunsch mit etwas Kala Namak Salz würzen.
8. Den Bergkäse fein über das Rührei reiben und mit Schnittlauch bestreuen.

Alex Strödel erzählt ihre Geschichte - vom Allgäu über Südostasien bis nach Berlin. Die letzten drei Jahre war sie die kulinarische Leiterin im @ei.berlin im Plänterwald in Berlin. Jetzt bricht sie zu neuen Ufern auf. Was sie liebt? Wirtshausküche, alte Gerichte aus der Heimat, die man neu aufleben lassen kann - und vor allem: Menschen zusammenbringen. Eine Köchin, die in ihren späten Zwanzigern ihre Berufung fand und heute für flache Hierarchien und mehr Raum für Frauen in der Gastronomie kämpft.
