We saw an opportunity to honor the medium while unlocking the potential provided to us by this multifaceted region. Following our creative passions outside of the distillery has led us to some of our most awarded bottles, including Mirador Eclipse Texas Single Malt Whisky. For this exploratory, limited-edition whisky, Gabe’s interest in natural wine inspired us to substitute our standard ale yeast for two new yeasts: a red wine and rosé yeast alongside our house malt whisky yeast. This process yielded notes of soft, blush red berry and fruits-of-the-forest that our single malts typically don’t readily showcase.

Part IV: Four Regions. Four Different Flavors.

Despite starting life with the same liquid and same barrel as our three other regions: Scotland, Washington and Kentucky, Texas presented a flavor all its own. The regular 30-degree temperature swings turned our barrels into wooden pressure cookers, driving the whisky deeper into the staves, where a harmony of vanilla, smoke, spice and fresh oak notes could be absorbed – ultimately accessing flavor compounds other regions could not.
