High protein banana blender pancakes with chocolate chips. Couldn’t resist trying protein oats, and have to say, if nothing else they make the best blender pancakes of all time. The perfect meal prep breakfast, if you don’t eat them right away because they’re that good. 🍌🍫

My debut cookbook Healthy with a Side of Happy is Out Now!

1 super ripe banana
1 large egg
1 cup protein oats (I used Bob’s Redmill GF and organic)
1/2 cup plus a little plant based milk
1 tsp baking powder
2 tsp vanilla
1/2 chocolate chips

Coconut oil for cooking

Blend everything together until just smooth, melt coconut oil in a non stick skillet or cast iron griddle, cook your pancakes, add choc chips, wait for bubbles, flip! Enjoy!

Strawberry Milkshake, Vegan 🌸🍓🍫I can find strawberries at two of my favorite organic farms which means it’s officially strawberry season. Might be the best thing I’ve had all week.

1 cup strawberries
1 and 1/2 frozen banana
1/4 cup yogurt I used @cocojune_organic unsweetened plain Greek style.
1/4 cup coconut water/Nut Milk mixed
Chocolate rice crispies I used @onedegreeorganics
Yogurt for topping

Blend everything together except the cereal, pour into a glass add the chocolate crispies on top and more yogurt, enjoy!

This double chocolate brownie skillet is gluten free, vegan and refined sugar free and it’s one of the best desserts I’ve ever made. Kid and husband approved. It’s super quick and easy, and will leave you feeling great!
