What an absolute journey we have been on for the last couple of years… from the early days in the house all the way through into my studio! Meatballs can be so dry and rubbish but a simple little trick the Swedish have mastered is all you need!

Ad. In my personal opinion, you can’t beat smoky things, so whenever I have the chance to whip out the BBQ to char some bits to make them go all smoky, I jump at it!
I used the GoodHome Elland Kettle BBQ from @bandq_uk it does everything you need. Get’s hot, control the hot, work surface, hanging rail,bottle opener and a lid holder so you don’t have to hold the lid while cooking... what more do you need from a BBQ.
This is a pretty traditional ratatouille but with an added step of getting loads of delicious flavours in using the coals on the BBQ. Food doesn’t have to be complicated to be delicious, build those levels of flavours, balance the flavours and season.
The one simple win with cooking on a BBQ is to have a direct (hot) and indirect (cooler hot) this allows you to control the cooking and give you different results. Slowly stew the ratatouille while Charing the lamb chops.
