It was such a joy collaborating with Adeline and Viet and creating a simple coffee shop menu of sandwiches and pastries that reflect both of our cultures.
Here were the dishes of the day:
B.E.C. – A bún chả egg & cheese with steamed egg McD-style, bún chả sausage patty, pickled veggies, and shiso.
CHA CA BREAKFAST FUN – Chả cá–style pollock gravlax with dill, galangal, ginger, and lots of turmeric. Served bagel-style with homemade labneh “cream cheese,” herbs, and red onion.
FRENCH DIP BÒ KHO BAGUETTE – Slow-braised beef with lots of fish sauce and five spice, carrots, and star anise. Toasted until crispy and served with the cooking liquid as an homage to the French dip (or Chicago beef). Served with homemade giardiniera. (I didn’t take a photo 😭)

Notre version est végétarienne : bouillon de légumes, shiitake, racine de lotus, herbes aromatiques...
Qu'on peut pimper avec un œuf mollet et/ou du pork floss (porc séché effiloché a.k.a chà bông/ruốc)
C'est souvent servi avec un beignet frit (dầu cháo quẩy) qu'on trempe dedans
