A deep dive into the impact of cryogenically frozen hops, focusing on the differences between Cryo Hop and Cryo Fresh Hop, in flavour, aroma and visual appearance. Nexus and Essence are two IPAs made in the exact same way, featuring the same hops Simcoe and Krush, with the only difference being the way the hops have been processed.

Cryo hops are dried and processed before being frozen, creating more concentrated hop oils for maximum efficiency in dry-hopping. Meanwhile, Cryo Fresh hops are flash frozen ‘wet’, locking in bright and fresh characteristics and allowing wet-hop style beers to be brewed all year round.

We’ve crafted two IPAs, one using Cryo Hop and the other Cryo Fresh Hop, so we invite you to lean into this exploration, form your own opinion and help us continue to develop modern hopping processes.

This Mango Fruit Sour is based on a recipe we made all the way back in 2017!

We’ve packed 500kg of mango puree into this ripe and juicy sour, coating every last drop with rich tropical aromas. We’ve left the mango completely unaffected by any other adjuncts, allowing this luscious fruit to shine all on its own. Pumping up the ABV to 8% we've reduced the residual sugars to focus on the natural tartness locked away in mango and giving it a big old punch. Sunshine embodied in a glass.

🌟 DIPA v20 | 8% DIPA | An exploration in grapefruit 🌟

Bio-transformation has become a regular feature in the flavour profile of modern beer, taking the known into new territory, but the results aren’t often singular and specific. At SIBA‘s Beer X in March this year Lallemand presented a new scientific paper that found grapefruit flavour compounds could be abundantly produced by pairing a classic US hop with specific lager and ale strains.

v20 was heavily hopped at whirlpool and fermentation before co-fermenting with both a lager and ale yeast. The result is a wonderfully bold grapefruit flavour that is entirely derived from this newly published process. We then added complimentary dry hops of Columbus, Centennial, Cascade & Loral to build additional flavour and complexity. We've gone for a slightly lighter body this time, using the addition of maize to add a lovely bright yellow colour and to compliment the delicate notes of grapefruit.

An exploration of Cryo & Cryo Fresh hops 🍃

We released 2 lovely brand new TIPA's, Yeah Tea & Yeah Bro, last week, one using a blend of Ceylon tea excuding notes of bright lemon citrus, peach and spiced wood and the other a classic blend of Mosaic and Nelson Sauvin, relishing in tropical dankness and elevated fruit forward notes. James here to chat you through them both so please let us know if you get to try them side by side and what you think! ❤️

🇳🇿 Hooked On Aotearoa | DDH IPA | 7% 🇳🇿

Pronounced ‘ow-tear-roh-ah’, the latest in our Hooked On series of Double Dry Hopped IPAs takes us to New Zealand and the landscape that inspired our Hooked On Aotearoa DDH IPA.

First up is Eggers Special, a very unique Riwaka hop variant from New Zealand's Eggers, a niche hop grower specialising in Riwaka. This hop variant is known for its deeply fruity aroma - pineapple, lime, grapefruit and passion fruit. We've paired this with the more usual Riwaka varietal which gives flavours and aroma of berries, an incredible peachiness, guava, and a suplhur-y, herbal, almost oregano-like pepperiness.

With the addition of modern NZ favourites Motueka & Nelson, expect all the usual dank flavours we pack into a hazy DDH IPA, spanning the spectrum from white grape and gooseberry, to sticky overripe pineapple.

For Eternal Bird Sings we explore the complex and intense nature of New Zealand hops by layering Nelson, Motueka and NZ Cascade, crafting an experience of tropical juice and fruity dankness.

We’ve then amped up this brew with the addition of Fresh Nelson, Fresh Wai-iti and Fresh Waimea Hopkiefs from Freestyle hops. These liquid hops are added to the dry hopping process to further amplify and lock in as much flavour in the liquid as possible.

This week we are seeing double with 2 pairs of brand new TIPA's and DDH Pales! 🍻

☕ Yeah Tea | TIPA | 10% ☕

Tea leaves hold a wonderful plethora of aromatic and unique flavours similar to hops but in a much softer, subtle nature. Using cold steeped Ceylon tea we’ve blended this delicate profile with the intensity of a TIPA to weave intricate layers of bright lemon citrus and spiced wood alongside a base of Loral and Motueka, added in the dry hop to further lift the citrus profile. As always we keep the body thick, chewy and sticky-sweet with help from the honey-like undertones of the Ceylon tea.

💪 Yeah Bro | TIPA | 10% 💪

Our Triple IPAs are a celebration of big, dank, sweaty hops, and Yeah Bro is no exception. Featuring a bold combination of Mosaic and Nelson Sauvin, Mosaic leads with tropical notes of ripe mango, tart passionfruit, and a hint of fresh blueberries while Nelson Sauvin elevates the profile with its signature white grape essence, ending with a fruit-forward, herbaceous finish that lingers on the tongue.
