The Darby’s éclair.

Who doesn’t love an éclair? For the big kids out there, this one has become a firm favourite. Crisp choux pastry filled with silky salted caramel crème pâtissière, finished with a glossy caramel glaze and just the right amount of sea salt.

Best enjoyed with a coffee, or as a little treat after lunch.

A nice little tie-in with the bakery. Francis knocking out the lightest, fluffiest brioche in town, filled with beautiful sweet Devon crab from Kevin at Top Catch.

A lovely summery addition to the menu. Best enjoyed on the terrace with a little glass of something ice cold, sharp and acidic.

alf native lobster, chips, garlic butter. Simple pleasures.

This dish takes me right back to 1999, my first kitchen job in London at the Oak Room under Marco Pierre White. I learned this style of lobster there working under @robertatreid_les2garconsbistro , alongside some proper legends of the industry. Funny how certain dishes stay with you forever.

We’ve had it on last week and keeping it rolling this week while we can get our hands on some of the best native lobsters around. One of those great little dishes that works any time of day — long lunch, quick bite, bottle of wine, happy days.

If you’re heading to the Chelsea Flower Show, swing by before or after for a proper Darby’s detour.

And glad to see Mason gave it the sign of approval 🦞

Rhubarb season finished. We meant to get this out a little earlier, but thought it would be nice to share while Isaac is off in sunny Mallorca looking beautiful.

This was probably our favourite from the little rhubarb dish to date. Rhubarb, bay custartd, rhubarb sorbet oat crumble.

Now onto strawberries… super excited to see what he does next. 🍓☀️

Three courses for £29.

Salt day boat from our pals @hendersonseafood pollockbrandade with crisps, herb salad, seriously good extra virgin olive oil and smoked paprika.

Pappardelle with XO sauce, a serious amount of pecorino romano and wild garlic. Luxurious, comforting and with just the right amount of kick.

Then finishing with a hyper seasonal Amalfi lemon and elderflower trifle.

Simple, seasonal cooking and properly delicious.
